Vegan Granola recipe

Yields about 8 cups and serves six to eight people

4 cups of oats
1 1/3 cups  pumpkin seeds
1 cup shredded coconut
1/2 cup brown sugar
1/2 cup maple syrup
1/3 cup vegetable oil
pinch of salt
2/3 cup dried cranberries
2/3 cup raisins

1. Pre-heat oven to 300 degrees
2. In a large bowl thoroughly mix all ingredients except for dried
cranberries and raisins
3. Spread mixture evenly onto a baking sheet lined with parchment paper
4. Put baking sheet into pre-heated 300 degree oven and bake for 20 minutes
stir mixture one time at the 10-minute baking mark
5. Remove from oven and let mixture completely cool
